Barley soup

Ingredients for 4 people:
1 onion
1 tbsp butter
30 g carrots, diced
30 g celery, diced
100 g barley
1.5 l water
80 g smoked meat
2 bay leaf
50 g raw potato, diced
1 tbsp parsley, finely chopped
pepper from the mill

Peel the onion, dice and lightly fry in butter. Add the diced carrot and celery and braise for about 5 minutes. Wash the barley in cold water and then add to the pan with the vegetables. Add the water, smoked meat and bay leaf and leave to cook. 20 minutes before the end of the cooking time add the diced potato. Take out the smoked meat and leave to rest. Cut into dice or small slices and then add back to the soup. Before serving, season with salt and pepper and parsley and then serve.

Cooking Time: about 1½ hours

    Following the success of the 2017 edition, "Sommeliers on the slopes" is proposed again for winter 2018. For the initiative, which aims to enhance the winning combination of skiing and excellent local wines, there are six dates planned, scheduled between December and March.
